Tasted on All Saints Day, the niflette comes from Provins. This cream pastry has a sweet scent of vanilla and orange blossom. We offer you a simple and gourmet recipe to enjoy them at any time of the year.

  • To make the pastry cream: pour the cold milk, powdered sugar, vanilla sugar, cornstarch and egg yolk into a saucepan.

  • Whisk until boiling, then remove the pan from the heat.

  • Pour a few drops of orange blossom and mix. Let the cream cool.

  • Preheat the oven to 180°C (th. 6).

  • Place a sheet of parchment paper on a baking sheet. If you don’t want to use paper, wet the baking sheet with cold water to prevent the dough from sticking.

  • Roll out the dough. Cut out discs 6 cm in diameter and place them on the sheet.

  • Place the discs in the fridge for 30 minutes (this step is optional).

  • Place a tablespoon of cream in the center of each disc.

  • Bake for 20 minutes.

  • Remove from the oven and sprinkle with icing sugar until the pastry cream is completely covered. Leave to cool slightly, the niflettes are best warm.

    We offer you a recipe with a pastry cream made from cornstarch, but you can also make it with flour. In this case, the flour will be added when the mixture of milk, sugar and egg is hot. The paste then thickens over low heat.
