Squid slices with tomato and Provencal herbs


Squid is the name of the squid that was caught. Squid strips are often cooked in the form of rings. Who hasn’t experienced the canteen-cooked fried calamari rings? We offer you a less caloric and delicious recipe for squid strips with tomato and Provencal herbs.

  • Peel and mince the shallots and garlic.

  • Wash the calamari in clean water and cut them into strips.

  • Pour a drizzle of olive oil into a high-sided pan. Fry the squid strips for 2 to 3 minutes then set aside.

  • In the same skillet, sauté the minced garlic and shallots. Add the peeled tomatoes, tomato puree and 2 sugar cubes. Let simmer over medium heat for 10 minutes.

  • Add the Herbes de Provence and a pinch of Espelette pepper powder. Simmer again for 10 minutes.

  • Add the calamari and cook for 1 minute.

  • Salt, pepper and mix. Serve the dish immediately.

    If you’re using frozen calamari, don’t cook them too long to keep them tender. Indeed, a long cooking makes them too firm and rubbery.

    The sugar reduces the acidity of the tomato.
